We are planning a vacation and I needed to get rid of the veggies in the frig and the spuds on the counter. I roasted all the veggies except the zucchini for my cauliflower pizza and made two cauliflower pizza doughs. I will use them this week and skip the salads at lunch. The romaine will be gone this week as we have a tossed salad most every night before dinner. I also roasted the last two poblanos and laid them flat in the freezer for a quick freeze and will add them to my collection of poblanos. The jalapenos will be cut and frozen. The spuds will be cooked in my Instant Pot for potato salad (pressure time will be 4 minutes) and the two yams will be cooked for our dog. He loves them. This should clear out the frig. We will only be gone a week so the cheese and eggs will be fine. I refuse to waste any food at todays prices. What I can't cook will be made into something and freeze it.
When we get back there will be a lot to accomplish:
*Start the garden seeds and my herbs in our barrels. It is probably to late for peas but most everything else will be fine. Texas has a long growing season AND a lot of bugs and critters. Probably need to stock up on Neem Oil and spray bottles.
*Wash windows inside and out
*Several crafts
At least summer will be hotter for the laundry line as long as there is a good wind. I can even put the towels out in the summer.
