Becoming More Frugal Nowadays

I let broccoli go too far and lost the whole head. I was upset. From now on I am making each head into meals I intend to use. Broccoli goes bad pretty quickly.

Broccoli Cheese Soup will freeze. If you use dairy (cheese is fine)  it won't freeze well. I will make the soup I intend to put in the freezer with chicken broth ad add cream when I warm it up.

Broccoli Salad for hubby. Ingredients are similar to creamy cabbage (mayo, sugar, white vinegar). Broccoli Beef Stir Fry and casseroles are other options.

Yesterday I needed to roast some veggies. I made 2 pans of yellow potatoes, 2 poblanos, and a lonely yam. I also made two pans of what I call White Enchiladas, a dish of corn beef hash for hubby, two cauliflower pizza crusts, and sautéed cabbage with bacon cooked in bacon grease.

Any veggie that is starting to look bad I will cook them up or make something with them. 3 1/2 hours later I was done.

Very crispy pizza. This is what you get when you put two items in the oven and forget you only need this in for 10 minutes. It was fine just crispy.

We have been eating cucumbers, squash, lettuce, and radishes from the garden. I also supplement my salads with radish and beet leaves. These were not in large quantities, but maybe later in the season or when we replant some in the fall. Hubby put up shade cloth over the plants. Next week we are in the triple digits.

I keep a running To-Do list on my frig. I was never successful with a book planner. This whiteboard is much better and right in my face.

Cooking is done in the AM and projects, which I have many, are for afternoons like deep cleaning the master bath and starting 2 Christmas gifts.

Who said retirement was boring? Not in this house. Both of us have learned skills that allow us to make what others buy. Hubby was raised on a farm and I learned my domestic skills from my Mother, Nana, and high school classes.

Survival is key nowadays. Shopping malls someday will be a thing of the past as online ordering will eventually take over. You best have some learned skills. Google might not be available if it gets really dicey.
